Steve Smith is widely regarded as one of the most inventive and gifted chefs of his generation. Renowned for his modern British cooking, founded on using the finest seasonal ingredients available. Steve has held a Michelin star for the last twenty years, also earning Five AA Rosettes, 8/10 in the Waitrose Good Food Guide and winning a Catey Award for Chef of the Year in 2014. Steve started his career in the kitchen of Jean Christophe Novelli, before going on to work with Shaun Hill, Paul Heathcote and Simon Gueller.

Originally from Brittany in France, Sergio has previously worked in Michelin Starred restaurants such as the two starred Hotel Million in Albertville, Savoie and the Hotel Majestic Villa des Lys in Cannes. Sergio has a level 4 diploma in WSET (Wine & Spirit Education Trust) a Sommelier Caviste diploma from France and was also a 'UK Sommelier of the Year' semi-finalist in 2006, 2010, 2011, 2012 and 2018. Sergio loves creating living wine lists which will evolve continuously, showing the wine characteristics of each region and how they differ from each other; selecting organic biodynamic and organic wines from emerging wine locations to the more traditional and classic areas. Food and wine matching is culinary pleasure for Sergio, who is always striving for the ‘Perfect Pairing’.
